LARK goes dark with bold new winter release LARK Distilling Co. has unveiled the latest edition of its annual DARK LARK release, introducing what the distillery describes as its most ambitious expression in the series to date. Now in its sixth release, DARK LARK was originally created to celebrate Dark Mofo, but has since evolved into one of LARK's most anticipated limited releases.
For 2026, the whisky arrives in a striking matte black 700mL bottle, reflecting the after-dark inspiration behind the expression while marking the first time the series has been presented in the larger bottle format. Despite its dark appearance, the whisky is designed to offer a bright, vibrant style that balances richness with freshness.
Matured in fortified wine casks and crafted from LARK's Tasmanian Single Malt spirit, the release delivers layers of dark fruit, sticky figs and spiced syrup alongside notes of shortbread, wild strawberry and honey.
Master Distiller Chris Thomson said the whisky was inspired by the energy and atmosphere that emerges after sunset. "While many celebrate Tasmania's beauty through shifting daylight and seasons, it is the vibrancy of the island at night that inspired this whisky. "Night belongs to everyone. Across the world, the energy of people gathering after sundown inspired us to create a whisky as dynamic and surprising as the evening itself. Fortified casks bring dark fruit, sticky figs and spiced syrup, while delicate shortbread and wild strawberry unfold into soft honey. Silky and electric, this whisky glows with the warmth of Tasmania after dark. Bold, majestic and made for nights that pulse with possibility."
Alongside the new bottle design, LARK has also introduced a more accessible pricing strategy, with DARK LARK now retailing for under AU$200. The move reflects the distillery's ambition to introduce more whisky drinkers to premium Tasmanian single malt while maintaining the craftsmanship and quality the series is known for.
Designed for sharing and evenings spent with friends, DARK LARK 2026 celebrates the contrast between light and dark, delivering a whisky that captures the bold character of Tasmania after sunset.
